Julia Behrens has practised as a medical herbalist for over 20 years and has gained a specialist and in-depth understanding of the complexities of Lyme disease and co-infections. This has developed from her multi-systemic approach to medicine and considerable research, which she still continues. Over the last 10 years she have attended numerous conferences across Europe concerned with Lyme disease, worked in a Lyme clinic and collaborated with other Lyme professionals across a range of disciplines.

Daphne Lambert is a chef with over 40 years experience, with over 25 years of experience as a nutritionist. She has been a an organic gardener & environmentalist for most of her adult life.As a chef, Daphne was the co-owner and chef of the first certified organic restaurant in Wales, winning many awards. For over 30 years she trained young people in her kitchen and many now run their own acclaimed food businesses. She was a trustee of the Soil Association for 9 years. As a nutritionist, Daphne has worked for Garden Organic, Neal's Yard Remedies, The Bulmers Foundation, The Pregnancy Food Company, The University of Wales, Abel & Cole and is an associate fellow at the University of Sussex.
